Mexican Zucchini Casserole



Let's have a fiesta. This is one zucchini casserole with a little extra kick.

Ingredients
  • 2 tablespoons olive oil
  • 3 pounds zucchini, cubed
  • 1 cup chopped onion
  • 1 teaspoon garlic salt
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon cayenne pepper, or to taste
  • 1 cup cooked long-grain rice
  • 1 cup cooked pinto beans
  • 2 1/2 cups salsa
  • 1 1/2 cups shredded Cheddar cheese
